It is thanks to the geological formation of the Chianti area that the landscapes are so varied and that there is such a diversity of agricultural produce and manufactured goods. One of the latter is terracotta, the most famous being that of Impruneta in the province of Florence.  It is used to make the traditional vessels called “orci” used for storing olive oil and the bricks which give the characteristic appearance to so many towns and villages, particularly in the province of Siena.

The hard work in the furnaces is linked to the culinary tradition which today places value on the so-called
dishes of the poor for their simplicity and use of local ingredients. One of these is “Peposo dell’Impruneta”, a beef stew which used to be left near the furnace to cook, unattended, for a whole day.
